Stove-top Popcorn

  • 3 tablespoons coconut oil

  • 1/3 cup popcorn kernels

  • salt to taste

  1. Place the oil in a large pot and set to high heat

  2. Place 2-3 kernels in and close the lid, listening closely for when these pop

  3. When the kernels pop, add the rest of the 1/3 cup of popcorn kernels in an even layer

  4. Cover the pot, remove from heat and count 30 seconds

    • This method first heats the oil to the right temperature, then waiting 30 seconds brings all of the other kernels to a near-popping temperature so that when they are put back on the heat, they all pop at about the same time

  5. Return the pan to the heat

    • The popcorn should begin popping soon, and all at once. Once the popping starts in earnest, gently shake the pan by moving it back and forth over the burner

  6. Once the popping slows to several seconds between pops, remove the pan from the heat and dump the popcorn immediately into a wide bowl to dry & crispen

Buttery Brown Sugar Salted Caramel

  • 1/4C brown sugar

  • 1T butter (my favourite is Nuttelex)

  • splash of vanilla essence

  • salt to taste

  1. Place a pan on a medium heat

  2. Simply throw in all the caramel ingredients until they melt together

Tip: cook longer than you think and darken the mixture to create delicious bitter note

Dalgona

Make sure you have your popped corn + baking tray with nonstick liner set to go before you start making the caramel because once you add in the baking soda science takes over and things need to move quickly in order to avoid disappointment!

  • a pinch (about 1/8t) baking soda

  • extra salt to taste

  • baking tray w/ nonstick liner

  1. To the above Buttery Brown Sugar Salted Caramel stir in baking soda - this will quickly start to foam so make sure you stir fast!

  2. Once combined throw in popcorn and toss to ensure all corn is coated

  3. Before things start to set layer the coated popcorn on your baking tray in an even layer and sprinkle with salt

  4. Wait 5-10minutes for everything to set before breaking apart and indulging in this delicious treat!

Further Ideas:

Important to note that Dalgona or Ppopgi is a Korean candy made with melted sugar and baking soda. It was a popular street snack in the 1970s and 1980s and is still eaten as a retro food. This is just a base recipe with so many ways to manipulate and create other scrumptious variations.

In addition to popcorn, I like to add other toasted nuts. Think pecan, walnut, cashew, pumpkin, sunflower seed - all taste incredible when tossed in the honeycomb mixture.

Toss in some dark chocolate whilst the mixture is still warm before you lay in the oven tray for an even richer experience.
