I typically use dried pitted dates as these are super affordable but if you have the budget for fresh that works too!

Method

Flatten dates to thin rounds - making sure to keep them stable enough to carry the rest of the toppings!

Layer on 1/2t - 1t worth of peanut butter on top of each date before putting it in the fridge (or freezer if you have space) to chill

Set up a double boiler to melt the dark chocolate, or use a microwave-safe bowl and blast for 10-second intervals whilst mixing between till smooth
- Top each bite with chocolate, spread to cover the peanut butter and pop back into the fridge/ freezer to set before devouring OR placing into containers...
These bites will last in the fridge for at least a week (possibly longer but I worry about condensation forming) BUT will last in the freezer for at least a month! So good to have on had for a sweet treat.
